Wine making
Fermentation and skin maceration for 18-24 days at a temperature of 25°C. Malolactic fermentation in stainless steel vats. Aged in 7-20 hl Slavonian oak barrels for 8 months. Aged in vitrified cement vats for around 8 months, then bottled for at least 3 months.
Earth
Fattoria Pomona is located in Castellina in Chianti, at an altitude of 350 metres. The soil is mainly composed of limestone marl rich in micro-elements. The Sangiovese of Chianti Classico grows partly in the Sant'Ilario vineyards (marl, alberese limestone and clay - a very friable soil) and partly in the Vigna del Termine (clay-limestone).
