Vinification
Fermentation in stainless steel tanks on selected yeasts, at controlled temperature, for approximately 25 days. Ageing on fine lees, partly in small oak barrels.
Terroir
Vineyards raised in pergolas, aged about thirty years, oriented southwest, about 450 meters above sea level and protected from northern winds. Alpine-Mediterranean climate.
Le vigneron
Florian Unterthiner and his wife Brigitte cultivate their 4.2 hectares of vines on the hillside in the utmost respect of nature. Thanks to the constant ventilation in their position, they do not use any herbicides. It is with incredible humility, which contrasts with the extreme elegance of their wines, that they welcome their visitors to the family estate, cherished for three generations.
Florian’s great-grandmother had seen it right when she asked for the military service exemption for her last son, who would probably have wasted his winemaker skills pursuing a military career in Rome. It is thus a wonderful wine history that he bequeathed to us—for our greatest pleasure.
